Cosmos Restaurant in downtown Minneapolis is the flagship restaurant of the Graves 601 Hotel, one of the first modern luxury hotels in Minneapolis. While the restaurant has always been noticed for it's excellent food and service, in recent years Cosmos has been a bit of an after-thought in the flourishing restaurant scene in the Twin Cities. Cosmos' newest head chef, the brilliant John Occhiato, has been busy revitalizing their menu and commissioned me to shoot new shots for the restaurant. I had a great day working in a private back-room with my makeshift studio. Of course I sampled along the way, getting to nibble on these incredible showcases of food and flavor. The Waygu beef was spectacular as was the morel mushroom toast.
